- INGREDIENTS
- 500g chicken thighs, deboned
- 1 packet Royco® Sweet & Spicy Apricot Cook-in Sauce
- 1 chopped onion
- 1 finely chopped carrot
- Half a bunch of spinach finely chopped
- 1 cup of finely chopped rainbow peppers
- 1 cup of rice
- 30ml olive oil
- 500ml water
- Freshly milled salt and black pepper
- METHOD
- Brown your chicken in olive oil until it’s golden.
- Add the uncooked rice, stirring to coat it nice and shiny in the oil.
- Add the veggies except for the spinach and stir.
- Let the pot simmer partly covered.
- Add the spinach
- Add Royco® Cook-in Sauce and allow to simmer
- Serve and enjoy!
