  • INGREDIENTS
  • 500g chicken thighs, deboned
  • 1 packet Royco® Sweet & Spicy Apricot Cook-in Sauce
  • 1 chopped onion
  • 1 finely chopped carrot
  • Half a bunch of spinach finely chopped
  • 1 cup of finely chopped rainbow peppers
  • 1 cup of rice
  • 30ml olive oil
  • 500ml water
  • Freshly milled salt and black pepper
  • METHOD
  • Brown your chicken in olive oil until it’s golden.
  • Add the uncooked rice, stirring to coat it nice and shiny in the oil.
  • Add the veggies except for the spinach and stir.
  • Let the pot simmer partly covered.
  • Add the spinach
  • Add Royco® Cook-in Sauce and allow to simmer
  • Serve and enjoy!
